Recipe: Creme de Menthe Pistachio Cake

This is my all time favorite cake to have for my birthday!  I think my mom has made it for the past 28 years for me.  It is so moist and good and I just can’t get enough.  I decided to make some cupcakes over Easter weekend and they were so good!  I haven’t had this cake since my birthday last year.  Usually I make it in a bundt pan but cupcakes are great for sharing with our neighbors.  Also I went to the store and got all the ingredients and forgot cupcake papers!  Sooooo I had these mini cupcake papers and just made those instead which worked out great because we had even more to share:)

The Recipe:

1 package yellow cake mix with pudding in the mix(it says on the box “pudding in the mix”)

4 eggs

1 cup club soda

1/2 cup oil

1 package instant pistachio pudding

4 oz. Creme de Menthe

3/4 cup chocolate chips

Icing:

4-1/2 oz. cool whip

1 cup milk

1 package instant pistachio pudding

Mix together cake mix, eggs, club soda, oil, pudding and creme de menthe.  Blend well with mixer.  Pour batter into bundt pan that has been thoroughly sprayed with pam- make sure it’s really sprayed in the crevices of the pan or it won’t come out of the pan!  Sprinkle 3/4 cups(I may or may not put more in!) chocolate chips over batter.  Stir by hand to blend.  Bake in 350 oven for 45-50 minutes until done.   Let cake cool completely before removing from pan.  Mix together icing ingredients and frost sides and top of cake.  Top with additional chocolate chips.

For cupcakes I fill each cup 3/4 with batter and sprinkle a few chocolate chips into each cup, then bake.  They will take less time- see cake box for times.  These below were mini cupcakes which took even less time than the box said.

This recipe is so so easy and much better than just straight from the box cake.  Yum!

I also LOVE my turquoise vintage Pyrex bowls and containers.  I’m sad that my polka dot one broke recently- Chris dropped it:(  He was afraid to tell me, but what was I going to do?   I will find another one, maybe on ebay.
