This is a quick no cook dinner recipe courtesy of Real Simple Magazine– one of my favorite mags out there!  This is perfect for summer- lots of fresh veggies and you don’t have to cook a thing.  Perfection in my book:)  Plus anything with goat cheese is a-ok in my book.  When we were in Ireland we had this most amazing fried goat cheese- we were in heaven!

You can find this recipe here.  Next time I want to add olives(green or kalamata) and maybe toasted pine nuts- yum!  Also I would make more of the dressing and save it for another night.  Home made dressings are so easy to make and taste 1000 times better than the store bought kind.
