It’s seems since it won’t stop snowing out that I make soup almost every weekend lately.  I had to try this recipe from Real Simple, one of my favorite magazines that is still in print (RIP Domino) for Creamy Broccoli Soup.  It was excellent I must say.  2 things I changed:

1-I used wayyy more cheese and pepper than called for:)  I think next time I will add the cheese into the pot and/or add cream- I know this is supposed to be healthy and cream is not so good for you but it tastes sooo good and will make the soup more “creamy” as stated in the recipe title.

2-I used toasted slices of Italian bread instead of bagel chips- worked just as well and the bread was on sale!

Oh and another thing- if you do not have an immersion blender you must get one!  Makes soup recipes so easy to make with no mess in a regular blender.

Le Creuset dutch ovens are amazing!  Plus they come in all sorts of great colors:)
